What are some different types of squash?

Butternut squash, acorn squash and spaghetti squash are all common types of winter squash. Summer squash, which refers to a warm-weather vegetable with a soft outer skin, includes zucchini, crookneck and scalloped squashes.

Winter squash are harvested in the fall, and they have a hard rind that allows them to keep through the winter months. Pumpkins are one of the most popular types of winter squash. Winter squash is used in soups, casseroles and desserts because of its mild flavor and high nutritional content.

Unlike winter squash, summer squash is harvested during warm weather before the rind hardens. Summer squash grows on bushes instead of vines. It is often used in casseroles, stir fries and salads.
