What are some different varieties of garlic?

Garlic comes in two main varieties: hardneck and softneck. Some hardneck varieties include rocambole, porcelain and silver stripe, while softneck varieties include artichoke and silverskin.

Hardneck varities of garlic have hard stalks that come out an inch or two from the bulb. Rocambole garlic has a rich taste and peels easily, producing about one clove, while porcelain produces about four. Purple stripe is best for making baked garlic. Softneck garlic has a papery layer on top of it and is the most common variety in grocery stores. Silverskin has a strong flavor and lasts up to a year when dried, while artichoke is more mild and lasts for about eight months.
