Before papaya seeds are dried, rinse them clean of all fruit and fruit residue. Once the seeds are clean, set them in the sun to dry, preferably in low humidity. Stir the seeds occasionally to expose moisture and ensure each entire seed dries. This process can take a few days.

Papaya seeds are high in good fats, protein and calcium, and they taste spicy when raw. Once they are dried, the papaya seeds can be ground into a powdered pepper seasoning.

In the Asia-Pacific region, papaya seeds are eaten to prevent parasites, to help with digestion and for their antibacterial properties.
