Food Network and Martha Stewart both feature simple and easy-to-follow recipes for potato frittatas. Food Network's is flavored with rosemary, while Martha Stewart's uses onions.
To make Food Network's recipe, preheat the oven to 450 degrees Fahrenheit. Heat 1/4 cup oil with 1 large crushed garlic clove. Thinly slice 1 pound baby potatoes and 1 small onion. Remove the garlic from the oil, and add the potatoes and onions. Season with 3 to 4 sprigs rosemary, salt and pepper. Cook for six to seven minutes. Turn the potatoes and onion, and cook for another five minutes. In a large bowl, whisk 12 eggs and 1/2 cup milk. Add egg mixture to the skillet, and transfer to the oven to bake until golden. Scatter 1/2 cup Parmesan, turn off the oven, and let sit.
To make Martha Stewart's recipe, boil 1 pound small new potatoes until tender. Drain, and let cool. Peel, and cut into slices. Preheat the oven to 400 degrees Fahrenheit. Heat 3 tablespoons oil, and cook 2 small thinly sliced onions. Add potatoes, and cook,until golden brown. Season with salt and pepper. In a bowl, mix 1 ounce white cheddar and 10 large eggs. Pour mixture into skillet, and dollop with 1/2 cup sour cream. Swirl the sour cream into the egg, and cook for two minutes. Move to the oven, and bake for 10 to 12 minutes.
