It is easy to find recipes using leftover chicken on several websites, including Food Network, Cooking Channel, Huffington Post and All You. Some recipes include creamy lemon pasta with chicken, white chicken chili stew, scoopable Chinese chicken salad, and chicken, broccoli and cheese casserole.

To make scoopable Chinese chicken salad, combine a 16-ounce package of broccoli slaw, an 8-ounce can of drained and sliced water chestnuts, 1 cup of drained and chopped mandarin oranges, 1 cup of chopped scallions and 12 ounces of chopped, cooked chicken in a large bowl.
