Essene bread is a type of sprouted bread typically made from whole wheat berries. Essene bread is often made purely from ground sprouted wheat, though a baker may choose to add dried fruit or nuts.
Hard red winter wheat berries are a popular grain for use in Essene bread, though other grains such as rye may be used. To make essene bread, soak the uncooked wheat berries in water until visible sprouts form, usually three or four days. Drain and rinse the berries at least twice per day. Once the grain has sprouted, grind it into a paste and form the paste into a loaf shape. Bake the bread for two and a half to three hours at around 250 degrees Fahrenheit.
