EVOO is extra virgin olive oil that contains nothing but the pressed fruit of the olive and no additives. EVOO is classified as the most expensive, highest-quality olive oil. Extra virgin is a term given to oil that is officially tested in a chemical lab.
In addition to the chemical test, the oil must also pass a taste test by a trained panel appointed by the International Olive Council. The oil must be defect-free and retain some taste of the olives from which it is made. For example, oil made from ripe olives is milder with a buttery and floral taste. Green olives yield an oil that is pungent, herbaceous and bitter.
