Most types of legumes are rich in nutrients, such as calcium, iron, magnesium, folate and zinc. Because of legumes' high protein content, they are often used as meat alternatives. For example, tofu is made from mashed soybeans. Spreads such as hummus and peanut butter are also derived from legumes.
