Too much vinegar in a salad dressing can be fixed by breaking off pieces of bread crust and adding them to the dish to soak up the liquid. Once the bread is saturated, it can be removed and discarded and the salad can be re-dressed to taste.
If the vinegar overload is in a liquid recipe, the easiest way to downplay it is to dilute the vinegar by adding a small amount of water, broth or other suitable liquid to cut the liquid by up to half and reduce the vinegar flavor. For other dishes, increasing the sweetness or saltiness of the dish can help to mask an overabundance of vinegar.
