What is an authentic Valenciana paella?

Valenciana paella is a Spanish dish originally consisting of rice, chicken, rabbit, snails and beans. Many cooks in Spain have put different twists to the dish.

The first known creation of this dish was in the 1800s. It is now made in many restaurants in Valencia. The dish consists of Lima beans, white beans and string beans mixed with saffron rice and meats. Valenciana paella is now made with seafood in some areas of Spain. It was created because all of the ingredients were easily found in the chefs' area, and many people in Spain have a love of rice dishes.
