What is tempeh?

Tempeh is an Indonesian fermented soybean product rich in calcium and iron. Its firm texture and mild flavor make it a popular meat substitute. One serving of tempeh contains 18.2 grams of protein and about 200 calories.
Commercial manufacturers produce raw and pre-cooked tempeh in a variety of flavors. Raw tempeh must be cooked before eating and keeps in the refrigerator for up to 10 days. It may also be frozen for several months.
Tempeh is extremely dense. Steaming it softens the outer layer and promotes sauce absorption. Tempeh may be sliced into patties, strips or cubes. Crumbled tempeh is also an excellent substitute for ground beef.
