To freeze fried okra, wash and dry the pods, remove the stems, blanch the okra, cut the pods into slices before frying, and freeze in a single layer on a parchment-lined baking sheet. Once the okra is frozen, package it into freezer bags.
- Wash and dry the okra
Wash the okra pods, and pat them dry with a paper towel.
- Prepare the okra for frying
Cut off the stems, and discard any okra pods that are overripe or damaged. Okra is at its freshest when it is firm and crisp. Blanch the okra pods in boiling water for three to four minutes, and then submerge them in an ice bath for an equal amount of time. Remove the okra from the ice bath, and gently pat them dry with a paper towel, or dredge them in cornmeal or flour for breaded okra.

Slice the plain or breaded okra, and fry the slices in a hot skillet with oil. Occasionally stir the okra, and cook it for six to eight minutes.
- Freeze the okra
Lay out the fried okra slices on a parchment-lined sheet pan, and freeze the okra until firm. Once the okra is frozen, place it into freezer bags or a freezer-safe container.
