To freeze okra with the intent of frying it later, begin by washing the pods and removing their stems. Sort the okra by size. Put small pods in boiling water for three minutes, but leave large pods in for a minute longer.

Cool the blanched pods in an ice water bath. They should stay in the water for the same length of time they were boiled. Slice the cooled pods lengthwise.

Dredge each piece in cornmeal or flour, place the slices on a tray lined with parchment paper and put the tray into the freezer. After the okra has frozen, transfer it to freezer bags.
