To freeze shredded cheddar cheese, toss the cheese in some corn starch, place it in heavy-duty aluminum foil or a freezer bag, extract the air from the bag, and place it in the freezer. Cheddar cheese keeps for 3 to 6 months when frozen.
When freezing blocks of cheddar cheese, grate or shred the cheese prior to freezing. To freeze slices of cheddar cheese, place a piece of wax paper between each slice prior to freezing. Store grated cheddar cheese in an airtight container.
When thawing cheddar cheese, thaw it in the refrigerator. Only thaw the amount of cheese needed for immediate use.
