Corn syrup is a specific type of glucose syrup. Glucose syrup is made from the hydrolysis of a starch. When the source of the starch is corn, the end product is known as corn syrup. Glucose syrup is also produced from the starch of potatoes, rice, barley and wheat.
Enzymes can be added to corn syrup that react with the glucose and convert it into fructose. This is known as high fructose corn syrup. It is smoother, sweeter and more soluble than regular corn syrup. High fructose corn syrup is frequently used as a replacement for sucrose in the food industry. The most common variant of high fructose corn syrup contains 55 percent fructose and is used in soft drinks.
