Amish Apple Butter:
This is an authentic Amish way to make apple butter. Apple butter can be stored and used in various baked goods recipes such as apple pie and apple tart, and it can also be eaten on toast or in oatmeal, or even by itself for a sweet snack.
Prep Time: 10 minutes
Cook Time: 2 to 3 hours
Yields: 5 to 6 pints
Ingredients: (Note that all measurements are standardized)
- 4 quarts, apples
- 2 quarts, apple cider
- 2 cups, sugar
- 2 cups, dark corn syrup
- 1 teaspoon, cinnamon
- Reduce cider
- Cook apples
- Finish apple butter
Put the apple cider in a large pot and boil down until it is reduced to 1 quart. The 1 quart of reduced cider should be significantly thicker than before.
Place the apples into cider and continue to cook, stirring frequently. Cook until the apples become soft and the cider thickens even more.
Add in the sugar, dark corn syrup and cinnamon. Continue to cook, stirring frequently, until the entire mixture is thick enough to spread. Transfer the butter to clean mason jars and cover.
