Ingredients
- 1 1/2 cups sugar
- 1/2 cup salt
- 1 pound salmon fillets
- 1/2 cup maple syrup
- 3 tbsp brown sugar
- 2 tsp soy sauce
- 1 1/2 tsp liquid smoke
- 1 tsp black pepper

Cut the salmon fillets into 1/2-inch strips.
Mix the sugar and salt together and spread around 1/3 into a shallow dish. Lay the salmon strips onto the dish and use the rest of the sugar and salt mixture to cover the salmon. Put the strips in the fridge and let them cure for 12 hours.
Line a baking sheet with aluminum foil. Turn on the oven to 170 degrees Fahrenheit.
Scrape the sugar and salt mixture from the salmon strips. Use a paper towel to blot each strip dry. Lay the salmon onto the baking sheet and let it sit for half an hour at room temperature.
In a small bowl, mix the maple syrup, brown sugar, soy sauce and liquid smoke. Brush the salmon strips with the mixture.
Put the salmon in the preheated oven to bake. Bake the strips for a total of 6 hours, turning and basting every hour. To let the salmon candy harden, refrain from basting the strips in the last hour of cooking. Remove the strips from the oven when it is hardened, but not completely dry. Season with black pepper.
