What is a good yet simple potato casserole recipe?

Sticking with the basic potato casserole recipe makes for a good, easy-to-make casserole. Adding a few unconventional ingredients like bacon and a simple blend of seasoning will make the recipe even more interesting as is the case with the recipe shown here.
Potato Casserole
This recipe was created by celebrity chef Paula Deen and the recipe includes bacon and the chef's own house seasoning blend. Leftover mashed potatoes will work well with this recipe.

Ingredients:
- 4 medium potatoes, cooked
- 6 slices of bacon, cooked crisp
- 2 cups mashed potatoes
- 1 small onion, sliced thin
- 1 small bell pepper, sliced thin
- 1/2 cup sour cream
- 1/2 cup grated cheddar cheese
- 8 tablespoons butter
For the house seasoning:
- 1 cup salt
- 1/4 cup ground black pepper
- 1/4 cup garlic powder
- Prepare the potatoes
- Add onion, bell pepper and potatoes
- Add cheese and bake
Preheat the oven to 350 degrees Fahrenheit. Spoon and spread the mashed potato evenly on the bottom of a casserole dish. Spread the sour cream on top of the mashed potatoes evenly and then sprinkle the top with house seasoning according to taste.
Saute the onion and bell pepper in butter, and then layer it evenly on top of the sour cream. Slice the potatoes and then arrange on top of the onions and bell pepper.
Add butter on top of the sliced potatoes. Sprinkle with house seasoning and top with cheese. Bake for 30 to 35 minutes. Remove from oven and top with crumbled bacon before serving.
