The signature filling of Oreo cookies was invented by Sam Porcello. Nicknamed "Mr. Oreo," Porcello held five patents related to Oreo cookies, including chocolate- and white chocolate-coated Oreos.

Oreos have been made by Nabisco since 1912, beginning as a response to a similar cookie made by Sunshine Biscuits known as the Hydrox. Originally called the Oreo Biscuit, it has since evolved to the Oreo Sandwich, the Oreo Creme Sandwich, and finally the Oreo Chocolate Sandwich Cookie. The cookies have featured the Nabisco logo on them since 1952. Porcello's original mixture, which was sweeter than the one in Hydrox cookies, was originally made with lard but was later replaced with partially hydrogenated vegetable oil.
