What are some Italian beef recipes?

Some Italian beef recipes include Easter soup, or brodetto pasquale. This is a soup that traditionally begins the Easter feast and uses lean beef, egg yolks, a lamb breast and toasted bread. Another recipe is Roman style beef stew, or stufatino.

Stufatino uses lean stewing beef cut into chunks, and some recipes call for about five tablespoons of lard. Other ingredients are onions, bacon, celery, garlic, marjoram, red wine and tomato paste.

Another Italian beef recipe is beef birds country style, or uccelletti di campagna. This recipe calls for flank steak or other lean beef cut into thin slices, prosciutto and sage leaves.
