What kind of meat is pepperoni?

Homemade pepperoni can be made using pork butt, lean beef chuck, salt, sugar, cayenne pepper, sweet paprika, anise, garlic, dry red wine, ascorbic acid and sodium nitrate. The meat is ground and mixed with the remaining ingredients and cured in the refrigerator overnight. It is then stuffed in casings and hung to dry for six to eight weeks.
