How long do artichokes last?

Fresh artichokes should last up to a week if stored in the refrigerator, unwashed and in a plastic bag. A little water sprinkled over them before sealing the bag helps them remain fresh.

Fresh artichokes are easily kept in the refrigerator, either in a plastic bag or in a shallow bowl of water. If the artichokes still have stems attached, one can simply stand them up in a shallow bowl of water and refrigerate. Either of these methods allow artichokes to remain good for a week.

If one wants to freeze artichokes, there is a bit more preparation that needs to be done. Since raw artichokes do not freeze well, they should be cooked first.

• Simply put chicken stock and desired seasonings in a large pot and bring to a boil.
• Trim the stem and tough outer leaves off the artichokes and immerse in the boiling liquid for about 30 minutes.
• Remove them from the liquid, allow to cool and sprinkle with lemon juice to halt any discoloration.
• Put them into covered airtight containers or freezer bags and place in the freezer.
