Jumbo shrimp are boiled for 7 to 8 minutes in salted water. Large shrimp are boiled for 5 to 7 minutes.
After shrimp are done boiling it is important that they be removed from the hot water. Leaving the shrimp in the water continues to cook them and results in dry and overcooked shrimp.
If shrimp are not going to be consumed right away or will be used in a recipe they can be immersed into cold water. The cold water bath stops the cooking process.
Shrimp are done cooking when they turn pink in color. Boiling shrimp is the most common preparation method used for this type of shellfish.
