If ungarnished and stored in a tightly covered container, cheesecake can keep in the refrigerator for up to one week. To retain optimal flavor and texture, it should be stored in the refrigerator no more than two days before serving.
Cheesecake can be stored in the freezer for a month or more. It is best to remove the garnishes and wrap it in a layer of plastic wrap followed by a layer of foil before placing it in the freezer. Removing the cheesecake from the freezer the night before, leaving it wrapped and allowing it to sit the refrigerator overnight to thaw before serving provides best results.
