How long does egg salad keep?

Egg salad will keep in the refrigerator for three to five days at 40 degrees Fahrenheit or below. If egg salad has been in more than 40 degrees Fahrenheit temperatures for more than two hours, it should be discarded.

If one is intending to pack egg salad or egg salad sandwiches to be consumed later, make sure they are kept cool at all times. If a refrigerator is not available, pack the egg salad in a cooler or an insulated lunch pail with a freezer pack or a sealed bag of ice. While it is possible to keep egg salad in the freezer, it is not recommended, as egg salad does not freeze well and the taste and texture will be compromised.
