For how long should a capon cook?

Capons, which are castrated roosters and are slightly larger than typical fresh chickens, should cook for about 12 minutes per pound, although this time can vary depending on whether or not the capon is stuffed or not. For example, an 8-pound capon that is not stuffed should roast for about 90 minutes, or until the internal temperature of the meat registers 165 degrees Fahrenheit.
Because of the added cooking time and the risk of food-borne illness, stuffing any bird, such as a capon, is not recommended. One way to roast a capon is to cook it at high heat, such as 450 degrees, for a brief time, then finish it in a moderately hot oven at 350 degrees.
