Most wheat in the U.S. is winter wheat, planted between August and October and harvested from May to mid-July. The time it takes wheat to grow depends on when it is planted and the environmental conditions under which it grows. Water availability and temperature can affect growing times substantially.
There is also a spring wheat season, although many farmers only plant their crops during the winter wheat season. Spring planting occurs in April and May, and the resulting wheat is harvested from mid-August to mid-September. Spring wheat has less gluten than winter wheat, making it more suitable for cakes and baked goods rather than bread.
