Egg casserole is a breakfast dish made from eggs, sausage, potatoes, vegetables, milk and seasonings. It is easy to cook overnight in a slow cooker to enjoy the next morning.
Slow Cooker Egg Casserole
This recipe for overnight slow cooker egg casserole takes about 30 minutes of preparation work the night before.
Prep time: 30 min.
Cook time: 8 hrs.
Ready in: 8 hrs., 30 min.
Ingredients:
- 2 12-ounce packages of breakfast sausage
- 1 red bell pepper
- 1 cup chopped green onions
- 1 4-ounce can green chilies
- 1/4 cup of chopped fresh cilantro
- 1 30-ounce package shredded hash browns
- 1 1/2 cups grated cheddar cheese
- 12 eggs
- 1 cup milk
- Salt to taste
- Ground black pepper to taste
- Prepare the vegetables
- Cook the sausage
- Prepare the slow cooker
- Combine the egg mixture
- Cook the casserole
Chop the bell pepper, green onions and cilantro. If the canned chilies are not already diced, drain and dice them. Mix them together in a bowl and set aside.
Cook the sausage and slice it into 1/4-inch pieces.
Grease the inside of the slow cooker. Layer the hash browns, sausage, vegetables and cheese in the inside of the slow cooker.
Mix the eggs, milk and seasoning in a small bowl.
Pour the egg mixture onto the mixture in the slow cooker. Cover the slow cooker and cook the casserole on low for 7 to 8 hours.
