Sweet corn tamales are made from fresh corn kernels, butter, sugar, egg, baking powder, corn flour and corn husks. A large batch is easy to make and take under two hours to prepare.
This recipe originally appeared on "Mexican Made Easy" on the Food Network. Cooks can locate most of the ingredients at the grocery store or at a Hispanic grocery store.
Prep time: 20 minutes
Rest time: 30 minutes
Cook time: 1 hour
Ready in: 1 hour and 50 minutes
Ingredients:
- 7 cups fresh corn kernels
- 6 oz. butter
- 1/2 cup sugar
- 1 egg
- 1/2 tbsp. salt
- 1/2 tsp. baking powder
- 1/2 cup corn flour (harina de maiz)
- 20 dried corn husks
- Prepare the corn
- Make a dough
- Add the dough to the husks
- Steam the tamales
Soak 20 corn husks in warm water for 30 minutes. Cut 7 cups of corn kernels from the cobs and puree them in a blender or food processor in batches.
Use an electric mixer to cream the butter and sugar. Mix in the egg, salt and baking powder and blend thoroughly. Mix in the pureed corn and corn flour and blend into a dough.
One by one, lay out the corn husks lengthwise and spoon around 3 tbsp of dough to the bottom of each husk. Roll the husks over the filling by folding the long sides together and rolling the husks over the dough.
Add 1/2-inch of water to a steamer. Put the tamales in the steamer with the seam side facing downward. Steam the tamales for 1 hour, ensuring that 1/2-inch of water remains in the steamer at all times.
