Matzo meal is the ground version of matzo, an unleavened bread. Matzo meal can be purchased as a fine grain or medium grain and is typically found in the kosher section of grocery stores. It is used to make dishes such as matzo balls, pancakes and gelfite fish.
Matzo is made with flour and water. It often eaten during Passover because it is a flour item that is considered kosher. Matzo meal can be used as a flour substitute in dishes that do not need much flour, such as flourless chocolate cake and meatballs. It is not a recommended substitute for baked items that require large amounts of flour because it does not add the needed amount of structure.
