A clove is a portion of a head of garlic with generally 12 to 20 cloves in each garlic. The size of cloves will differ depending on the size of the garlic head.
Once removed of their paper-like covering, cloves are often crushed or minced before being used in a recipe. In this state a clove might yield a half-teaspoon to a full teaspoon of garlic. The potency depends on factors such as its source, age and preparation. For example, roasted garlic has a sweet, nutty taste that is dissimilar to its pungent properties when raw. Elephant garlic is bigger than regular, and its taste is entirely different.
