The Food Safety Inspection Service of the U.S. Department of Agriculture recommends that a pork loin be cooked until it reaches an internal temperature of 145 F; it can then be removed from the oven and allowed to rest for three minutes before serving. To make sure that the pork loin reaches a safe temperature, the USDA and the National Pork Board endorse the use of a digital cooking thermometer.
