Persimmons are in season between November and February. A persimmon is a sweet, mild-flavored fruit that originates from Asia. Persimmons are plentiful in Asia and are popular fruit trees in the United States.
There are two distinct kinds of persimmons: the fuyu persimmons and hachiya persimmons. Hachiya persimmons are orange-red in color and acorn-shaped. They are very astringent when unripe and have a bitter, tannic, chalky taste. When ripe, hachiya persimmons are soft and squishy to the touch with a jelly-like texture. Fuyu persimmons are light-orange and tomato-shaped. When fuyu persimmons become ripe, they are firm yet give slightly to the touch, similar to a peach.
