How do you know when to pick persimmons?

Harvesters know when to pick persimmons when they are mature but still firm and have an almost fully developed color. The color depends on the type of persimmon; the Maru variety is greenish yellow, while the Hachiya and Fuyu varieties are orange. Persimmons should be handled carefully to avoid bruising the fruit.

Persimmons that have fallen from the tree are considered ripe and can be picked. However, it is better to remove them from the tree to avoid insects. When a persimmon is ready to pick, harvesters can remove them by breaking the stem from the tree and leaving the calyx lobes attached to the fruit.
