What are some pie recipes that include Ritz crackers?

Mock apple pie, angel pecan pie and Ritz cracker pie are some pie recipes that use Ritz crackers. Ritz crackers may be crushed and incorporated into a pie crust, or in some cases, used as a filling.

Mock apple pie uses Ritz crackers and flavored syrup to mimic the taste and texture of apple pie filling. To make this recipe, preheat oven to 425 degrees Fahrenheit. In a medium saucepan, combine 2 cups of sugar, 1 3/4 cups of water and 2 teaspoons of cream of tartar. Whisk until sugar has dissolved. Bring the mixture to a boil, then reduce heat to medium. Simmer until mixture has reduced to 1 1/2 cups, about 15 minutes. Stir in zest and 2 tablespoons of juice from one lemon, plus 2 tablespoons of vanilla extract. Set aside to cool.

Roll out store-bought or pre-made pie crusts. Cut an 11-inch circle for the bottom crust, and a 10-inch circle for the top. Press the bottom crust into a pie pan. Fill the crust with 36 coarsely broken Ritz crackers. Pour the syrup over the crackers, dot with 2 tablespoons of unsalted butter and sprinkle with 3/4 teaspoon cinnamon.

Beat together one egg and 1 tablespoon of milk. Place the top crust over the pie. Seal and brush with egg wash, then sprinkle with 1 tablespoon of white sugar. Cut vents into the top crust. Bake for 30 minutes or until golden brown.
