Quinoa, a seed considered to be a whole grain, does not have gluten. It is also cholesterol free and rich in protein. It contains the nine essential amino acids humans require from food.
Quinoa was a staple of the Incan diet thousands of years ago in Peru, Bolivia and Colombia. Its 1800 varieties are now grown in many countries. Quinoa is a close relative of spinach, beets and chard, and its leaves can be eaten like spinach. Low in calories and high in fiber and magnesium, quinoa is said to be good for digestion, the heart and muscle growth. Some evidence also suggests it may help to stop migraines.
