A good substitute for pumpkin pie spice is a blend of allspice, cinnamon, ginger, nutmeg and ground cloves, according to Betty Crocker. This recipe mixes 3 tablespoons of cinnamon with 2 teaspoons each of ginger and nutmeg, then adds 1 1/2 teaspoons each of allspice and ground cloves.
This mixture makes enough for multiple recipes, and it stores well in a plastic container or glass jar. If cooks need to replace only 1 teaspoon of pumpkin pie spice, Better Homes and Gardens recommends mixing 1/2 teaspoon of cinnamon with 1/8 teaspoon of ground nutmeg and 1/4 teaspoon each of allspice and ginger.
