Ethanol is a straight-chain alcohol and it has a hydroxyl group, which causes it to be slightly basic.While ethanol is also called drinking alcohol, which occurs when fruits, vegetables or grains are fermented to produce alcoholic beverages, the result may be either acidic or basic. The fermentation process tends to become more acidic as it progresses. This happens due to the metabolic processes of yeast, which excrete into the beverage through fermentation over time. It is yeast that helps to convert the sugars in the fruits or vegetables into ethanol and CO2.
