To give a pork roast an even color and keep the surface of the meat moist, baste it every 15 to 30 minutes during roasting. Basting involves coating the outside of the pork roast with oil or pan drippings using a bulb baster, basting brush or large spoon.
Basting a pork roast gives the outside of the roast extra color and flavor, but it does not affect the inside of the roast. To keep the inside of the pork roast moist and tender, don't pierce the meat when turning it, because this allows juices to escape. Instead, carefully turn the roast using a wooden spoon or a spatula.
