Species of whitefish include cod, pollock, halibut, sole and sablefish. There are several subspecies of many of these types of whitefish. The varieties of sole include yellowfin sole, dover sole, rock sole, rex sole and rockhead sole, all of which live off the coast of Alaska.

Whitefish take their name from the white color of their meat, even after cooking. The generic term "whitefish" is also interchangeable with "bottomfish" or "groundfish," which refer to the preferred habitat of the fish on the ocean floor. Cod is often called Pacific cod or true cod and, along with halibut, is one of the most common commercial fishing products.
