Spinach is a green, leafy vegetable that is very healthy. It contains high concentrations of vitamins, minerals, antioxidants and phytochemicals to help keep a person healthy and strong.
One cup of cooked spinach contains large concentrations of vitamins K, A, B-2, B-6, E and C, manganese, folate, magnesium, iron, copper, calcium, potassium and fiber. The green leafy vegetable also contains omega-3 fatty acids along with small concentrations of protein. Spinach has a low glycemic index and does not cause a person's blood sugar to rise or drop dramatically. The vegetable also has numerous phytonutrients, such as flavonoids and caretenoids, that help fight inflammation and possibly help prevent cancer.
