What is a springform baking pan?

A springform pan is a type of pan that has removable sides. There is an adjustable latch that holds the sides of the pan together. When unlatched, it is easy to remove the cake without damaging it. There are different shapes of springform pans, though most of them are round.

While any cake can be baked in a springform pan, this pan is ideal for more delicate cakes. It prevents damage to cheesecake and any cake with toppings, such as coffee cake. Since other cakes are flipped upside down for removal from an ordinary pan, springform pans speed up the removal process. The cake is first cooled in the springform pan, and then the ring is removed shortly before serving.
