Summer savory is an herb that has been used in cooking and medicine since the time of ancient Romans. It's used in soups, composed butters, teas and vinegars. Its botanical name, Satureja hortensis, is derived from the word satyr. Satyrs were mythical beings who had dominion over savory herbs.
Summer savory is an annual herb, which means it lasts one year before dying. The plant eventually has a bushy habit, and is filled with gray-green leaves. The small, pink or white flowers appear from July to September. They develop into fruit that resembles four tiny nuts.
Savory grows best in soil that is just slightly acidic, and is a companion plant to beans and onions.
