What is Taleggio cheese?

Taleggio is an Italian cheese. It originated and is named after the Val Taleggio region of Italy, and it is one of the oldest soft cheeses produced.
Taleggio contains 48 percent fat and has a strong, pungent smell. It is mild in flavor and has a fruity tang. Spices, raisins, nuts and lemons are sometimes added to the cheese to make it more appealing. According to tradition, when Taleggio is being processed from acidic milk to cheese, it is kept on wood shelves in the chambers of a factory, as well as in caves. The cheese is washed with seawater each week to prevent mold from growing. Total time for maturation of Taleggio is six to 10 weeks.
