Beef is considered to be cooked medium rare when the internal temperature has reached between 135 and 145 degrees Fahrenheit. Ground beef hamburgers should be cooked to an internal temperature of no less than 160 degrees for optimal food safety.
To achieve a medium rare roast, the cut of beef should be cooked at 350 degrees for approximately 30 minutes per pound and removed from the oven when the internal temperature reaches 130 to 135 degrees. The roast should then be left to stand outside the oven for 15 to 20 minutes so the juices can settle and allow for the carry-over heat to finish the cooking.
