Adding a teaspoon of lemon juice to the water may make hard boiled eggs easier to peel without affecting the taste of the eggs. Eggs that are placed directly in boiling water are much easier to peel than eggs that are started in cool water.
Old eggs peel easier than fresh ones. Placing the hard boiled eggs in an ice bath for at least 15 minutes before peeling may prevent sticking shells, and an even better option is to leave them in the refrigerator overnight. Cooling the egg makes it firmer and tighter, which makes the peel less likely to stick. When peeling the egg, it may help to gently tap the surface of the egg to crack the shell all over, and then peel it under running water.
