Capers are a condiment. They are dark-green, edible flower buds that grow on the limbs of the caper bush. After harvesting, capers are sun-dried and pickled in brine, vinegar, wine or salt.

Capers are a common ingredient in sauces, dressings and salads. They also appear as a garnish in pasta, seafood or meat dishes. Capers are available in six different sizes, ranging from 7 millimeters to 14 millimeters. The smallest capers are the ones most commonly used in dishes and sauces.

Many Mediterranean and Asian dishes use capers since caper bushes grow in areas of Asia, the Mediterranean and Southern Europe.
