People who are controlling their blood glucose levels often eat parboiled rice. Those who like the taste of white rice over brown rice but who don't want to lose nutritional value may also eat parboiled rice.
Parboiled rice refers to rice that has been soaked and steamed after harvest while still in its hulls. This makes for a transparent appearance, less sticky texture after cooking, and rice that separates more easily than either untreated white or brown rice. Nutrients also move from the hull into the grain during this process, providing more nutrition than untreated white rice. Parboiled rice raises blood sugar levels less than plain white rice, making it a better choice for diabetics.
