All vegetables have calories; however, most vegetables are low-calorie foods. Some vegetables are even considered to be negative-calorie foods, which means that it takes the human body more calories to digest them than food actually contains.
Besides calories, vegetables also contain small amounts of carbohydrates, fat and proteins. They all contain a variety of antioxidants, vitamins and minerals, which are most potent when the vegetables are consumed raw. Vegetables with the least amount of calories include all types of lettuce, spinach and kale. Starchy vegetables, such as potatoes, yams and sweet corn, have the most calories. Negative-calorie vegetables include celery, broccoli, cabbage and lettuce.
