What is the best way to store potatoes?

Potatoes should be stored in a cool and dry place that receives as little light as possible. Many people use potato bins or boxes and keep them below a countertop or in a cellar. Too much light can cause potatoes to turn green.

Potatoes that are not kept in a cool or dark place sprout more readily and do not keep as long as well-stored potatoes. Potatoes should also not be kept in a refrigerator, as it gets colder than the 45 to 50 degrees Fahrenheit recommended for storing potatoes. Potatoes can be stored briefly in a cardboard box or brown paper bag in a cool place, such as a garage or under the basement steps.
